This dressing is a fantastic vinaigrette. I especially like it on a salad with dark greens, fruit (pears, oranges, apples, berries, etc), and nuts.
I think I might become a vegan. :)
Whisk:
1/3 c. balsamic vinegar
1/2 c. olive oil
2 Tbs. dijon mustard
1 Tbs. honey
salt and pepper to taste
